We have used scanpan for the past 16 years and they are one of my favorites, aside from the very old faithful cast iron pans. No pan is truly stick free except the toxic teflon ones when they are new for about the first ten times. Even then they have to be treated with kit gloves (no metal, not harsh scouring) and with this they eventually start to peel, etc. The scanpan can handle a stainless steel spatula, knife, or scouring pad and still maintain its surface. There is no peeling and toxic smell. Even though a stainless steel scouring pad can be used, they are not often needed. A little bit of oil or butter added before cooking and they clean up nicely. The temperature is pretty even too. I use these pans all the time and love the way they help me cook. When I use this poacher, I just add a tiny dollop of butter or oil and the cleaning couldn't be easier. I also like the 6 egg capability. Any 10 & 1/4 inch pan works. The scanpan brand is not necessary. I would highly recommend this.
